Ask anyone in Shanxi what they are proudest of, and the answer is usually noodles.
Shanxi is often called the noodle heartland of China, and its single most famous export is
Dao Xiao Mian — knife-cut noodles — which Datong has made its own.

The name describes the technique. The chef holds a block of soft dough in one hand and a curved
blade in the other, shaving thin strips directly into a pot of boiling water. The strips fall one by
one, each thicker in the middle and feather-thin at the edges. Good knife work produces noodles of
even length that cook in seconds and carry sauce well — there is nothing quite like watching it done
at an open counter.

How to order

Noodle shops in Datong work on a simple formula: pick a topping, pick a size. Common choices
include:

  • Tomato and egg — the everyday classic, mild and slightly sweet. A safe order if
    you are new to the dish, and the usual choice for vegetarians.
  • Braised pork — rich, soy-braised meat over the noodles.
  • Beef or lamb — heartier, often with a spoonful of chili oil on top.

Sides are what make the meal: a braised egg, dried tofu, or shreds of kelp. Vinegar sits on every
table — Shanxi is also China’s vinegar country, and locals season their bowl liberally.

What it costs

A bowl in an ordinary noodle shop costs roughly ¥10–30 depending on the topping; add a few
yuan for sides. It is the closest thing Datong has to a national dish you can eat on a budget.

When to eat it

Any time — but a steaming bowl hits hardest in winter, when Datong’s dry cold makes hot noodle
soup feel less like lunch and more like a survival strategy.

Where to try it

Noodle shops all over Datong serve it, from tiny counters to family restaurants. Anywhere with a chef shaving dough at an open pot is worth trying — the performance is half the meal. Ask for the tomato-and-egg topping if you prefer it mild or vegetarian.
